What is your "go to" type of assignment when you have a substitute?

I am out a LOT this year for various trainings, presentations, etc. 

What is your "go to" type of assignment on days when you aren't in the classroom?

What matters:

1. Easy for students to understand

2. Less of a chance of cheating

What doesn't matter:

1. Time (to an extent)- 90 block

2. Number of copies needed

  • I have an assignment sitting in a folder in case of emergency. It's on the Seven Wonders of the Ancient World. The students explore them, map their locations, find commonalities among them and discuss what each says about the people who created them. Then it is set up to have a rousing discussion regarding which is the most significant. If a creature was visiting from another universe, which would best tell the story of our humanity?
